This Hassleback Chicken and Potatoes recipe is simple yet pretty tasty. I would not normally have chicken breast as a meal choice because it tastes bland in my opinion. Hassleback chicken ensures you have moist flavoursome meat…. Every bite is tasty and juicy.
Ingredients:
- 3 chicken breasts
- 1/2 a large roughly chopped red onion
- 2 cloves of garlic
- 1/2 roughly chopped red pepper
- 100 ml pureed tomatoes
- 1 tablespoon mixed Italian herbs
- 2 different types of hard cheese ( I went for Red Leicester and the Monteray Jack burger melts from Aldi
- Salt & Pepper for seasoning
Method:
- Blitz together the red onion, garlic, red pepper, tomatoes and herbs to form a thick paste
- Slice the chicken breast about 1 cm apart BUT not through ; leave at least 0.5 cm at the bottom of the breast so it stays intact. Lightly coat the chicken with olive oil
- Fill the slots with alternative filling i.e. cheese, tomato paste, cheese etc
- Bake at 180 degrees for about 40-45 minutes until the chicken is cooked.
- The chicken has a lot of flavour in it so just needs to be served with some spring greens.
Hassleback Potatoes
Have you tried Hassleback potatoes? They are really easy to make too and look scrumptious at any dinner party.
Ingredients:Washed baby potatoes, butter, dried herbs (oregano or rosemary) & salt and pepper to taste
Method: Place each potato on a wooden spoon and slice. TIP: The wooden spoon acts as the perfect tool to prevent you from slicing the potato through.
Melt some butter and add the dried herbs, salt & pepper into it. Pour this over the potatoes and bake as per the instructions on the packet. TIP: I use a brush to ensure the butter gets into the slices.
