Cooking with Ian Haste

Ian Haste has a new cookbook out;  The 7-Day Basket.

The concept is simple and the cookbook is perfectly easy to follow and recipes are achievable.

I picked the Summer chapter ( Basket 7). There are 10 chapters (baskets) in the book ranging from Light to Round the World. Each meal feeds 2 and the portions are generous.

For each week you get a detailed shopping list and the menu. I don’t normally do a weekly shop however I feel a transformation coming on. Planning my meals makes me feel in control of what I am eating for dinner and saves me money because I am not popping to the shops multiple times.

What I like about Ian Haste’s book is the recipes are varied and they are not hard to make. I also found you can tweak them a bit in case you don’t have all the ingredients.

Here are some of the recipes I have tried:

Griddled Tuna Steak, Nicoise Salad: This salad was so tasty and vibrant it made a healthy evening meal.

Feta & Chicken Meatballs in Lemon Spaghetti: Juicy meatballs with fresh-tasting spaghetti. This was so delicious and the lemon spaghetti balanced the dish out well.

Thai Coconut King Prawn Curry: I have never made a Thai Curry from scratch and after I made this one I don’t think I will go back to packet mixtures. The dish was fragrant and I have made this twice. It is so quick too- cooks in 20 minutes.

Chorizo & Mushroom Toasts with Sunny Side-Up Eggs: All my favourite ingredients on my plate. We enjoyed this as a breakfast and the combination of ingredients is spot on. I would never have put honey in with chorizo and mushrooms however it works so well.

Tear & Share Chicken Shashlik Naan: I was a bit flustered at the thought of making my own naan. My mum is a pro at it but I have never made them. I preferred not to share mine but just roll it up and tuck into it. It was scrumptious. My first couple of naans were not perfect but they got better.

Peach & Sage-Stuffed Pork Fillet with Garlic Potatoes: This makes a juicy Sunday roast. I could not get a big pork fillet and bought medallions instead. They worked just as well.

I look forward to trying and sharing more recipes from the 70 in the book. Keep an eye out on my Instagram account.  It sure is a cookbook I have enjoyed cooking from and one I recommend.

  1. I love the idea of the 7 day meal plan with a shopping list and no waste. I am sure it would encourage me to be a more ambitious cook.
