Rice Krispie Treats are popular yet so simple to make. They are normally a combination of rice Krispies, marshmallow and butter. I find them too sweet so I swapped the marshmallow for peanut butter, melted 54% chocolate used chocolate rice Krispies and add it to chocolate brownies. These are my Chocolate Rice Krispie Treats Brownies. The end result is a chocolatey brownie with a crunchy layer on top.

These are SO TASTY and CHOCOLATELY without being sickly. The Chocolate Rice Krispie layer adds crunch to this brownie. Using darker chocolate (54% or more) in this recipe makes them less sweet and sickly.
I went with 1:2 ratio on the bake but you can make a thinner brownie or double the rice Krispie treats layer. It will still taste nice.

How to make the Chocolate Brownie Layer
Any brownie recipe will be ideal. If you have a favourite one, use it. If not try out my chocolately recipe. My key to a good brownie is to use dark chocolate/cocoa however I like that nice chocolate taste and do not like my brownies that sweet.
Line a 8×8 baking dish (affiliate link) using a lining paste and baking paper.
Preheat the oven to 180 degrees Celsius.
Melt butter and to this add in your chopped dark chocolate (54% or more) and combine. Let this cool.
In a large bowl whisk your eggs with the sugars until pale and fluffy.
To the butter mixture add in your cocoa powder, plain flour, vanilla essence and salt and combine.
Fold this butter mixture with the egg one. Try not to overmix.
Pour the mixture in a lined dish and bake for 50-60 minutes. I can normally tell the brownie is ready when the kitchen begins to smell so good. Overbaking the brownies can lead in cakey texture. You want to bake it just so when you place a skewer in the middle it comes out clean.










How to make Chocolate Peanut Butter Rice Krispie Treats
Making Rice Krispie Treats with no marshmallows is really easy. This recipe just uses chocolate rice krispies, melted chocolate and peanut butter. You can swap the chocolate rice crispies for plain ones. It will still taste delicious.
To make the Chocolate Rice Krispie Treats, melt semi dark chocolate and then combine it with peanut butter. I went with crunchie but you can use smooth. Once this is combined, add in the rice crispies and combine.
Now all that is left to do is layer this on your brownie and chill. Alternatively if you want the Rice Krispie Treat on its own, fill cup cake moulds with it and chill until set. They are scrumptious.
This recipe is a great way to use up left over chocolate especially over Easter. You can use all milk chocolate but it will be sweeter. I have tried it before with a mixture of dark hazelnut chocolate and milk chocolate and it turned out great. 3 Ingredient Rice Krispie Treats are the best.



How to make Chocolate Rice Krispie Treats Brownies
Once your brownie is baked, leave it to cool in the pan. Using a blunt knife try and loosen the edges.
While it is cooling make your rice Krispie treat layer. Now pour this onto the brownie, ensuring you press it firmly to get rid of any air pockets. You want enough pressure to form an even layer without breaking the brownie underneath.
Leave this to chill for at least 3 hours. I made an Easter version and before I put these to chill I added a mini egg in each square.
I cut my layered brownie into 9 squares and though they looked big they were delicious and everyone ate the whole square. The crunchy texture on top works so well with the fudgy bottom layer.






How to store these rice krispie layered brownies
These brownies are best enjoyed as soon as they are cut. This is to ensure you have maximum crunch from the Rice Krispie Treat layer.
Having said that I kept 3 slices wrapped in foil for 3 days at room temperature and they were fine.
How to serve the Rice Krispie Treat Brownies
You can enjoy these brownies on their own or warm them in the microwave for 30 seconds and serve with ice cream.
Chocolate Rice Krispie Treat Brownies
Equipment
- 1 8 x 8 baking tin
Ingredients
Chocolate Brownies
- 145 g butter
- 60 g dark chocolate
- 3 eggs
- 125 g granulated sugar
- 125 g soft light brown sugar
- 60 g plain flour
- 60 g cocoa powder
- 1 tsp vanilla essence
- 1/4 teaspoon salt
Chocolate Rice Krispie Treats
- 200 g mixed chocolate I prefer 54% plus
- 4 tbsp peanut butter
- 50 g rice crispies
- packet of mini Easter eggs optional
Instructions
How to make chocolate brownies
- Preheat the oven at 180 degrees celcius. Line an 8×8 baking tray.
- Melt butter. I use Bain Marie method. You can melt it in a stainless steel pan. Add in the dark chocolate and combine until melted. Let this cool.
- Whisk the eggs and then add in both sugars and whisk again until airy and pale in colour.
- To the chocolate mixture add in cocoa powder, plain flour, vanilla essence and salt and combine well.
- Pour this chocolate into the egg mixture and fold it together. Try not to over mix.
- Pour this into your prepared baking tray. Bake for 50-60 minutes, until a skewer comes out clean.
- Leave the brownie in the pan and make your rice crispies topping.
How to make chocolate rice krispie treats
- Melt chocolate in a large bowl. Add in the peanut butter and combine.
- Place a layer of this mixture on the brownie mix.
- Now add the melted chocolate rice crispies and mix.
Assembling the rice krispie layered brownie
- Spread this on top of the brownie. Press it firmly so there is no air pockets.
- Chill for at least 3 hours. Cut with a sharp knife.
Both work really well.
