Desi Corn Ribs

The corn rib trend took tiktok by storm and after trying it out myself I know why. They are just so delicious and easy to munch on. I created an Indian version and it was an explosion of flavours.
They work so well as a snack and make the perfect barbecue addition. Don’t worry if you don’t have a barbecue, I did mine in the grill and they turned out perfect. Pre boiling them ensures they are cooked and then you just need the char on them.

Desi Corn Ribs

This recipe will be suitable for 4 people. I used 4 sweetcorns for this recipe. To start with prepare the sweetcorn marinade and while the sweetcorn is cooking make the green coriander chutney (recipe below).

It is a perfect recipe to prepare beforehand. The only you have to do when your guests arrive is grill or barbecue the sweetcorn then drizzle the coriander chutney and serve.

Sweetcorn Marinade

  • 2 tsp crushed garlic
  • 1 tsp crushed red chilli or green 
  • 25g butter 
  • 4 tbsp olive oil 
  • 1 tsp ground cumin
  • 1 tsp salt
  • 1 tsp ground pepper

Cut the corn into four pieces. The husk is hard so be careful. Think an electric knife would be great. Boil the corn for about 10 minutes until the corn is soft and cooked. I did try cutting the corn after it is boiled but the husk still stays hard.
While the corn is boiling make the marinade. Mix all the ingredients together and microwave for 30 seconds just so the butter melts. 
Once boiled, lay the corn onto an oven tray, then brush the marinade onto them. Grill for about 5 minutes or until the corn starts to chat then brush on more marinade. Return to the grill until for another 5-10 minutes.

Coriander Chutney 

  • 2 cloves garlic
  • 1 green chilli
  • 1/2 juice of lemon 
  • 1 cup chopped coriander 
  • 1/2 cup yoghurt 
  • 1 tsp ground cumin
  • 1 tsp salt

Blitz all the above other together to form a chutney in a food processor. If you like it with more yoghurt, add some after you have blitzed it all.

Once the corn is charred, drizzle the sauce onto the ribs then garnish with chopped coriander and chilli flakes (optional).
