Easy Chocolate Pots with mini eggs
Ingredients
- 3 chocolate hobnobs
- 5 grams melted butter
- 50 grams mini eggs
- 100 ml double cream
- 30 ml chocolate liqueur Mozart
- 50g dark chocolate
Instructions
- Crush the biscuits and then add the melted butter to the crumb. Combine well.
- Divide the biscuit mixture between 2 ramekins and press down with the back of a teaspoon.
- Melt the dark chocolate. The microwave works well. Do it in 30 second intervals stirring each time. Once it is almost all melted, give it a final mix until smooth then leave to to cool.
- To the double cream add in the chocolate liqueur and beat for about 30 seconds until it begins to thicken. Add in the cooled melted chocolate and beat briefly until combined.
- Crush the mini eggs. A pestle and mortar works the best. Leave a couple of big pieces out for decorating later then pour in the rest to the cream mixture
- Divide the mixture between the ramekins. Garnish with the left over mini eggs then place the ramekins in the fridge for a couple of hours to set.
- Remove from the fridge 15 minutes before needed and enjoy
FAQ
Can I use plain hobnobs: Yes you can use plain hobnobs or equivalent. You can also use digestives if you don’t have hobnobs
How long before can I make these? You can prepare them the day before. Just take them out 15 minutes before serving
What other liquor can I swap this for: Any cream one works well including Baileys. Baileys chocolate pots are a favourite in our household over the holidays. If you can I recommend trying Mozart because it is rich and has a lovely chocolate flavour.
Can I use milk chocolate instead: You can use melted milk or white chocolate to make these pots. I prefer the dark chocolate to give the intense chocolate flavour without adding too much sweetness especially with the addition of mini eggs.
