Garlic & Spice Pork Steaks with Sumac yogurt

Have you ever cooked with Sumac? It is a tangy and lemony powder, deep maroon in colour and is used widely in Middle Eastern and South Asian cuisine. Spice Kitchen sent me some Sumac to try out and after doing some reading I put together this recipe.

Serves 2/3

Pork marinade

  • 4 pork loin steaks
  • 3 cloves garlic (this can be altered depending on your love for garlic)
  • 1 tablespoon Sumac
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1 teaspoon ground Cumin
  • 1 teaspoon ground Cumin
  • Olive oil


  • 2 tomatoes
  • 1 small red onion
  • 1 teaspoon coriander paste (I used Bart ‘s)
  • Salt to Taste


  • 200 grams Greek Yogurt
  • 1 tablespoon of Sumac
  • Salt to taste


  • Chop the ingredients (apart from the meat) for the pork marinade in a mezzaluna until almost fine.

  • Massage the marinade into the pork chops and leave this in the fridge for at least an hour to marinate in an airtight container. Another method I have found that stops your fridge from smelling is cover the bowl with cling film then newspaper. I read somewhere the newspaper acts as an absorbent?

Whilst the pork is marinating, prepare the salad and yogurt.

  • For the salad, chop the tomatoes and onion into small cubes and place in a bowl. Add the coriander paste and some salt to taste.
  • The yogurt is easy to make; just mix it with the Sumac and salt.

Take the pork out of the fridge about 15 minutes before cooking.

  • Heat a pan with rapeseed oil. Add the pork and cook on both sides until well done. This is normally about 10 minutes each side on low heat but may vary depending on the thickness of the steaks.

The pork can be served in many ways. On this occasion I had it with tenderstem broccoli. You can also have it chopped up in a pitta bread with some yogurt and salad or serve it with a creamy mushroom sauce on its own.

I fancied from vegetables with the pork and prepared tenderstem broccoli 🥦. The easiest way to cook it is to place the broccoli in a pan and add a tablespoon or two of water depending on the amount. Cover and let it cook on low heat. This is similar to steaming it. For added flavour I sprinkle garlic salt, a quick spray of oil and sesame seeds to my broccoli and give it a good stir.
