Some of you may know my love for making Macarons. I knew there was room for improvement (there always is) and I could not have thought of a better way to perfect my skills with a Masterclass by Kimm, owner of Maison Des Macarons.
A bit about Maison Des Macarons:
Kimm’s passion for Macarons started about 4 years ago after watching James Martin. Since then Maison Des Macaron has grown and recently the Macarons were in the Chelsea Flower Show.
The Macarons are all made by Kimm from her home kitchen. Quality and Perfection is key for her and to ensure every batch is to the high standard Kimm, runs the whole show.
The Master Class:
Set in the countryside the drive to Maison Des Macarons in the morning put me in the right frame of mind…calm and ready to learn.
There were two of us at the Masterclass. We got an introduction of how the business started whilst sipping on some tea. Kimm then told us the rough schedule for the day. I loved the relaxed nature of the class; nothing was rushed and I felt at home. I think this was the key to absorbing the information given to us and enjoying the whole experience.
Kimm prepared the first batch while we watched, took notes and followed the recipe.
I did have a wee panic when I found out we were making Italian Macarons because that is something that I have always thought was hard. However, a good passionate teacher always makes it easier and now I think that is the only way I will be making Macarons.
It was our turn next and Kimm was to hand the whole time helping, teaching and guiding us. We also got a great number of tips which were so valuable.
We got to pick our colours and toppings. I went for a pale green.
Once we piped our Macarons (pipe, stop and pull) and ensured no bubbles were visible, the champagne was popped and we enjoyed some bubbly to celebrate. This masterclass is done in style guys!
Whilst waiting for our Macarons to bake we sipped on Buck’s Fizz before heading out to the garden for some. We had a beautifully laid table ready for us. Our lunch consisted of a freshly prepared carrot soup followed by beautifully made sandwiches, a green leaf salad, and a refreshing watermelon, pomegranate and feta salad (and a lot of talking).
It was a beautiful day and we could have spent the whole afternoon there however we had Macarons to pipe.
We were shown how to make the ganache and got to pick our fillings too. I did half a batch of raspberry and half of salted caramel. “Gently press and turn” Kimm would say and that has stuck with me along with many other techniques used.
However much I wanted to eat one straight away, the Macarons had to be chilled for 24 hours. To start the process Kimm put them in her fridge whilst we went back out and enjoyed some Eton Mess. I told you this Masterclass was to a high standard and I meant it. Kimm definitely is the hostess with the mostest.
After finishing our dessert we boxed our Macarons carefully before heading straight back home to put them in the fridge.
I left Maison Des Macarons with a big smile on my face and was truly inspired. Kimm believes in high standards and quality with no shortcuts and that is exactly how it should be. Forgot to add whilst we were there someone drove 2.5 hours just to come and pick up some Macarons- that is how good they are.
In my head, I already had my own business plans rolling (a girl can dream right?).

It wasn’t James Martin but another celebrity chef on TV that made me want to have a go at making macarons (we all love eating them here!) But I didn’t have the ingredients so delayed it, and then life got in the way. I want to make macarons now!
Friends of mine had a macaron tower instead of a wedding cake, and I’ve been obsessed ever since. This masterclass looks fun, and yours look amazing!

I’m not sure I would have had the willpower to have waited the 24 hours at the end, Neha! But those macarons look superb! And if you’re making any sometime soon, then just pop a few down to South London if that’s okay..
