This viral Marry Me Chicken took Tiktok by storm last year. It has taken me a year to finally make it and share my recipe if you. It is called Marry Me because apparently this will make your partner marry you because it is so good.
Marry Me Chicken pasta is comforting and packed with flavour. The base of this is very similar to Tuscan chicken with Italian flavours from sundried tomatoes, garlic, parmesan, lemon and herbs. Here is my Tuscan Cod recipe and you can see the ingredients are similar. The best part is it in one pot so easy and less mess making it perfect for mid week dinners.

How to make Marry Me Pasta aka One Pot Pasta
Start by chopping your chicken thighs into small cubes. I always prefer this to having a large piece because it has more flavour around it. Add in some salt, paprika and pepper to this chicken and mix.
Heat a wide pan that has a lid. The one I use is a dupe of the Le Creuset one that Aldi sold a while back. I find it keeps the heat even during cooking and keeps the food warm once on the table too. I use it on the small burner on high heat.
In the pan add in some oil and butter. Add your chicken to the pan so it starts to cook. Spread it evenly so it is on one layer. About 5 minutes in turn it and cook for another 5 minutes.
Move the chicken to the side of the pan and add in your garlic and chopped sundried tomatoes. Cook this until you can smell the aromas from both. About 5 minutes. This is important to get maximum flavour.
Now mix the chicken in and add in half your stock, the spaghetti and then top with the rest of the stock. I use Knorr but you can use what you like. Make sure your stock is hot. For 650 ml I used two stock cubes.
Cover the pot and let this cook for 15 minutes, stirring half way through. Depending on your pasta this can vary. Stirring it half way ensures there is no dry pasta and the flavours are evenly distributed. At this point the chicken will cook further too. The sauce may seen runny at this stage and that is perfectly fine.
Once cooked, turn off the heat and add on your herbs, cream and spinach and stir it through until the spinach wilts. The sauce will thicken as you add these extra ingredients.
Sprinkle on a generous amount of parmesan, stir, sprinkle some basil on top and serve.
The end result is a silky creamy comforting dish you will love.

Chicken Thighs vs Chicken Breast
I always use chicken thighs. Compared to breast it has more iron. Also due to their fat content, chicken thighs is richer in flavour and the meat cooks more tender. Unlike chicken breast the thighs are less dry when cooked.
What types of pasta can I use for this one pot pasta
I have used spaghetti but you can use any hard pasta you like. The measurement should be the same. Some pasta may absorb more water than others, so you may need to add in more stock and cooking times may vary slightly.
Can I make a vegetarian version of Marry Me Pasta Sauce
The beauty of the Marry Me recipe is it is versatile and you can make substitutions that suit you. You can skip the chicken all together and just make a one pot pasta with the creamy Tuscan sauce. Parmesan is not suitable for vegetarians because it contains rennet. Some stores sell a vegetarian version so keep an eye out for that.
You can also swap the chicken for salmon.
Storage and Reheating One Pot Pasta
This dish keeps well in the fridge for 3 days after being cooked.
To reheat the dish add in a couple of tablespoons of boiling water. If it is too thick, add a bit more but remember the water should be boiling.
