Ingredients You’ll Need for puff pastry apple pies
With shop bought pastry, these mini apple pies are so easy to make. I went with the seasonal kissabel apples but Granny Smith or gala work fine. You just need a sweet tart variety if possible.
I use apple cider vinegar for a better flavour. If you do not have this you can use lemon juice.
- 1 packet ready to roll puff pastry
- 2 apples
- 25 grams butter
- 2 tsp cinnamon powder
- 1 tsp vanilla essence
- 1 tsp apple cider vinegar (or lemon juice)
- 40 grams brown sugar
- 1 tsp cornflour (depending on how much liquid the cooked release)
- Egg wash (whisked egg)
- 25 grams cinnamon sugar
- 1/2 tsp cinnamon


How to make mini apple pies with puff pastry
- Peel and dice apples. Cook with butter, brown sugar, vanilla, vinegar, and cinnamon for 10 mins. If watery, add cornflour and cook 5 more mins. Let cool.
- Prep the pastry: Roll out puff pastry. Indent or cut circles. Add a spoonful of filling to each base.
- Assemble pies: Fold pastry over filling. Cut out circles. Seal edges (fork optional).
- Finish tops: Brush with egg wash, sprinkle cinnamon sugar. Chill 15 mins. Score tops lightly (optional).
- Bake: Bake at 200°C for 18–22 mins until golden.








Tips for Perfect Puff Pastry Apple Pies
- Chilling the pies and before baking gives them the best rise. Cold puff pastry rises better
- Use sweet tart apples for a balanced flavour
- Don’t make the mixture/filling runny : it will make the bake soggy and the juices may seep out
- The egg wash seals the pies and gives them a golden finish. You can use a fork to press the edges together for extra security
- Sprinkle cinnamon sugar on top for extra crunch and flavour
- Cut the top of the apple pies once they are chilled, after the egg wash and on cold puff pastry to ensure clear cuts




How to serve apple pies
These taste best served warm. You can enjoy them on their own or with custard, ice cream or a drizzle of cream.
Storage and reheating
Keep the puff pastry in an air tight container for a maximum of 3 days at room temperature.
To reheat apple puff pastry pies place them in a preheated oven at 180 degrees for 5 to 10 minutes. You can reheat in the air fryer too, just lower the temperature. Do not reheat in the microwave because the puff pastry will go soggy.

- 1/2 tsp cinnamon
Instructions
- Prepare the apple filling: Peel and dice your apples. Cook them in a pan with butter, brown sugar, vanilla essence, apple cider vinegar and cinnamon until soft (around 10 minutes). If the apples release too much water and the mixture is wet, add in cornflour and cook for 5 minutes. Once cooked let this cool down.
- Roll out the puff pastry: If making round pies, lightly indent the half the pastry with the circles so you know where to put your filling. * if you prefer you can cut out all the pastry with circles. Assemble the pies: Place a spoon of filling onto each indented circle. (If you have cut all your circles then place filling on half of them). Fold over the other half of the pastry then with you cutter cut your circle pies.
- Seal and brush: Folding over the pastry on top then cutting the pies should seal them but you can press the edges with a fork for extra protection. Brush the pies with the egg wash and sprinkle your cinnamon sugar mix.
- Chill for at least 15 minutes then using a sharp knife make shallow slices on top. You don’t want to cut the pastry the whole way (optional).
- Bake: Bake in a preheated oven (200°C) for 18–22 minutes, until golden brown.
