INSTRUCTIONS TO MAKE HOMEMADE EASTER EGGS
Fill the half egg silicone moulds with a thin layer of chocolate. Tap to ensure the chocolate is all over and tilt to one side to spoon off any excess chocolate.
Freeze for 10 minutes so the chocolate hardens. For that extra chocolate layer, add on another thin layer of tempered chocolate. The second layer will not go on as smoothly because it will start to harden due to the chilled first layer. Freeze again. You can chill these in the fridge for 30 minutes instead of freezing them.
Fill the chocolate shells with a layer of pistachio filling/ pistachio crème. Like the chocolate the pistachio will begin to change in consistency due to the temperature of the chocolate. This is fine. Just spread a nice even layer on the shells.
Now add another layer of tempered chocolate. Try to work quick with this so it doesn’t mix with the pistachio spread.
While the chocolate is still melted, sprinkle the chopped pistachios in the shell. Freeze for 5 minutes or until the chocolate is set.
ASSEMBLING HOMEMADE EASTER EGGS
Remove the chocolate shells from the mould and now it is time to assemble them.
I find the best way is to warm a plate in the microwave and place the halves on the plate so the edges melt and then stick them together to form a single egg.
TIP: If you find your fingers are melting the chocolate, use gloves or cling film to handle the chocolate shells.
I am not a professional chocolatier, so the edges were not smooth when I stuck them together. To cover this, I piped some pistachio flavoured white chocolate along the edges and topped it with more pistachio. Nobody is going to know!
Now the finale…get some edible gold spray and give the pistachio and chocolate Easter eggs a glow.

Why should I use temper chocolate
Using tempered chocolate makes the finish smoother and glossier. It is to do with the crystallisation of the cocoa butter. You can read how I temper chocolate here.
How to store Chocolate Eggs with Pistachio
You can leave these at room temperature for a week (if they haven’t been eaten already). You can refrigerate the chocolate eggs in an airtight container for 2 weeks. To enjoy them, bring them to room temperature. I have not tried freezing them.
Can I make Vegan Pistachio Easter Eggs?
Yes you can. You just need to get the Vegan Pistachio Crème. I made some Vegan ones using the Lindt Vegan Milk Chocolate and they went down a treat. I prefer the darker chocolate to balance the sweetness of the pistachio crème.
These Homemade Pistachio Easter Eggs are a rich Belgian chocolate egg filled with pistachio crème and roasted pistachios to give it that beautiful texture. They are finished off with some white chocolate, more pistachio and gold lustre.

Tap to ensure the chocolate is all over and tilt to one side to spoon off any excess chocolate.Freeze for 10 minutes so the chocolate hardens. For that extra chocolate layer, add on another thin layer of tempered chocolate. You need to work quickly with the second layer as it will start to solidify quick due to the chilled bottom layer. Freeze for another 10 minutes. Fill the chocolate shells with a layer of pistachio filling/pistachio crème. Like the chocolate the pistachio will begin to slightly harden due to the temperature of the chocolate. Try and make an even layer. It can be as thick as you want. Now add another layer of tempered chocolate on the pistachio crème. Try to work quick with this so it doesn’t mix with the pistachio spread. While the chocolate is still melted, sprinkle the chopped pistachios in the shell. Freeze for 5 minutes or until the chocolate is set. Heat a plate in the microwave for about a minute. Carefully take it out. Peel the chocolate shells from the mould. Place two halves (edge down) on the plate to lightly melt the chocolate. Then join both halves together to form your egg. Repeat until you have all your pistachio chocolate Easter eggs ready. Melt some white chocolate and add in some pistachio crème and green gel colouringTo get rid of any gaps when joining the eggs, pipe some of the pistachio white chocolate around the edges and sprinkle some pistachio pieces. This is optional.Finish the Pistachio Easter Eggs with some gold lustre. This gives them a beautiful finish and disguises any imperfections.
