How to make chocolate brownies

  • Preheat the oven at 180 degrees celcius. Line an 8x8 baking tray.
  • Melt butter. I use Bain Marie method. You can melt it in a stainless steel pan. Add in the dark chocolate and combine until melted. Let this cool.
  • Whisk the eggs and then add in both sugars and whisk again until airy and pale in colour.
  • To the chocolate mixture add in cocoa powder, plain flour, vanilla essence and salt and combine well.
  • Pour this chocolate into the egg mixture and fold it together. Try not to over mix.
  • Pour this into your prepared baking tray. Bake for 50-60 minutes, until a skewer comes out clean.
  • Leave the brownie in the pan and make your rice crispies topping.
