Indulging in a creamy, homemade ice cream is always a treat, and what if we told you that you can create a delicious ice cream with just two base ingredients? This Pistachio Rose & Saffron Ice Cream no-churn ice cream recipe is about to revolutionize your dessert game. With the aromatic combination of pistachios, rose water, saffron, and a touch of cardamom, this ice cream is sure to captivate your taste buds and leave you wanting more.
Ingredients:
- 330ml Double Cream
- 200ml Condensed Milk
- 1 1/2 tsp Rose Water
- 2 tsp Rose Syrup (available at Asian shops)
- 1/2 cup chopped Pistachios
- 1 tsp bloomed Saffron (1/4 tsp ground saffron with a bit of ice)
- 1 tsp crushed Cardamom
- Mini roses for garnishing

Method:
- Using an electric mixer, whip the double cream until it reaches a thick and creamy consistency. The cream should hold together well. Do not over mix or else it will start to separate.
- In a separate bowl, combine the condensed milk, rose water, and 1 1/2 tsp of rose syrup. The rose syrup not only gives the ice cream a lovely light pink color but also adds a hint of flavour.
- Fold in the condensed milk mixture, chopped pistachios, bloomed saffron, and crushed cardamom into the whipped cream. Gently fold the ingredients together until they are well combined, ensuring not to overmix it to maintain the consistency.
- Prepare a freezer-safe mould. I used a loaf tin and lined it with cling film for easy removal later. You want enough cling film to be able to cover your tin too. Pour the ice cream mixture into your tin. To enhance the presentation, drizzle small dots of the remaining rose syrup (1/2 tsp) onto the surface of the ice cream. Then, using a fork or toothpick, create swirls by gently dragging the syrup through the mixture. Place a few mini roses on top as a garnish. Wrap the tin with the cling film, ensuring it is tightly sealed, and freeze for at least 3 hours.
- Once the ice cream is fully frozen, remove it from the mould by lifting it with the aid of the cling film and place it on your serving dish. Slice the ice cream into desired portions then garnish each slice with more chopped pistachios. The ice cream will have a creamy texture.
Summary
The rose flavour in this ice cream is subtle and well-balanced, allowing the other ingredients to shine through. The combination of pistachios, saffron, and cardamom adds a unique and exotic touch to every spoonful. This Pistachio, Rose & Saffron Ice Cream is a dessert that can be enjoyed throughout the year. Its simplicity and ease of preparation make it a fantastic choice for any occasion. Plus, the no-churn method eliminates the need for fancy equipment, making it accessible to everyone.
