Unpopular option: I don’t like shop bought doner meat. I watched a documentary once and it has put me off. However , when it comes to homemade doner kebab, count me in. This is my take on homemade doner kebab recipe based on the viral recipe by MezeMike. Everything, including the naan has been made from scratch.

What is the delicious viral Doner meat at home
Doner meat is seasoned meat that is stacked together, cooked on a vertical rotisserie and shaved off in thin slices. Doner means “turning” in Turkish and it is a recipe dating back to ancient times.
This recipe for doner meat makes those thin shavings in one bake. Yup it is that quick and you don’t need a rotisserie.
Ingredient for Homemade Doner Meat
This is what you need for 2 large or 4 small portions of juicy lamb doner meat
- 400 gram mince Lamb
- 1 medium finely minced onion
- 5-6 crushed garlic cloves
- ¼ cup yoghurt
- 2 tsp paprika
- 1 tsp cumin powder
- 1 tsp onion powder
- 2 tsp mixed herbs
- 1 tsp black pepper
- 1-2 tsp salt ( depending on taste and salt). I used 1.5 tsp Cornish sea salt
The onions and yoghurt aid in having juicy meat that is tender and slightly crispy on the outside ( a bit like the doner meat when its shaved).

How to make the Viral Homemade Doner Kebab at home
The recipe calls for seasoned mince meat to be flattened onto baking paper and then baked until juicy and fully cooked.
- Preheat your oven at 190 degrees Celsius
- Prepare 4 sheets of baking paper and measure to fit your tray. Use a lipped tray to catch fat and juices.
- Mix all doner ingredients and divide into 3 portions.
- Place one portion between two baking sheets. Roll thin (about 2 mm) with a rolling pin, oiling if needed to prevent sticking.
- Leave 1.5 in at one long edge. Remove the top sheet, fold the paper in 1.5 in sections until flat, then place in tray.
- Repeat with remaining portions, reusing the top sheet.
- Bake at 190 °C for 25–35 minutes (time varies by thickness and meat type).
- Cool slightly, peel off paper, and enjoy juicy doner slices

- Season the meat well
- Ensure onions are minced so you can roll out the doner meat
- Roll it out as thin as you can without it splitting – 2mm is perfect
How to assemble doner kebab
With your meat this recipe calls for
- Naan (my 2 ingredient one below is a winner)
- Tzatziki (made with roast garlic this recipe is so good)
- Easy fragrant salad (with just 3 ingredinets)
- Chilli sauce (optional)
- Roasted chillies (adding the roast chopped chillies is a great addition to the kebab)
Roast Garlic Tzatziki Recipe
A non-traditional method of making Tzatziki but this works a treat.
You will need:
- Yoghurt
- Cucumber
- 1 whole roasted garlic
- Salt & Pepper to taste
Slice the top of garlic bulb. Place the bulb on some foil. Drizzle oil and sprinkle salt on it then cover with foil. Place this in the oven the same time as the doner meat.
Grate the cucumber and add some salt to it. This enables it to release water so the yoghurt based sauce is not runny.
When the garlic is cooked, squeeze the water out of the cucumber then squeeze in the garlic bulbs ( once it has cooled). Add in Greek yoghurt, season and mix.





3 Ingredient Salad Recipe
An easy salad that adds a lot of texture and flavour to the kebab
You will need:
- Sweet vine tomatoes
- Coriander
- Sliced Red onions
- Red Pepper flakes or sumac
- Salt and pepper to taste
2 Ingredient Naan (Yeast Free Naan)
My go to recipe for soft homemade naan and you only need 2 ingredient, well 3 with the salt.
Knead the dough together for about 10 minutes, so the gluten can start to break down. Then let this rest for another 10 minutes. Split the dough into 4 (around 75grams each) and roll out each one into a round naan.
To get round naan, you need a floured surface and a rolling pin. The pressure should be light and the dough should turn around. If this does not work, on a flat floured surface, roll out the dough.
Heat a pan on medium – high heat. Please the rolled side down. Turn the naan when you see bubbles forming. Let the other side cook, swirling it occasionally so it down not stick. Give the naan a final turn, press firmly with a rolled up cloth and turn to let the steam penetrate through the whole naan so it fluffs up.
I love this naan recipe and use it for a lot of my curries as a side.




What meats can I use to make doner kebab
Beef, chicken or turkey mince works with this recipe. A high fat meat keeps it juicier.
Serving Suggestions
The meat is great with some salad or in a warm pitta with a crunchy salad, garlic dressing and a chilli sauce.
I like the doner meant in fresh naan, some roasted garlic tzatziki, and easy 3 ingredient salad and some hot chilli sauce.
You can equally skip the naan, and have the doner meat, tzatziki, salad and chilli sauce on some fries.
How to store and reheat doner meat
In the unlikely even that you have some Doner meat left, wrap it in foil and store in the fridge. The next day warm up in the oven at 180 degrees Celsius for 5 minutes. Leave it wrapped in foil.

Equipment
- 4 pieces of baking sheet
- 1 baking tray (lipped)
- 1 Rolling Pin
Ingredients
Lamb Doner meat
- 400 gram mince Lamb
- 1 medium finely minced onion red or white
- 5-6 crushed garlic cloves
- ¼ cup yoghurt
- 2 tsp paprika
- 1 tsp cumin powder
- 1 tsp onion powder
- 2 tsp mixed herbs
- 1 tsp black pepper
- 1-2 tsp salt depending on taste and salt. I used 1.5 tsp Cornish sea salt
- 1-2 tbsp olive oil when rolling out the meat
Tomato & coriander salad
- Sweet vine tomatoes
- Coriander
- Sliced Red onions
- Red Pepper flakes or sumac
- Salt and pepper to taste
Roasted Garlic Tzatziki
- Yoghurt
- Cucumber
- 1 whole roasted garlic
- Salt & Pepper to taste
Instructions
Lamb Doner Meat
- Get 4 sheets of baking paper ready. Measure your pan to check the length of the baking paper. This is to ensure your folded kebab meat sits in the tray. Use a lipped tray to ensure any fat and water released stays in the pan.
- Pre heat the oven at 190 degrees celcius
- Combine all the doner meat ingredients together. Split the mixture into 3.
- Take one baking sheet and place one part of the doner mix on there. Place another baking sheet on top and roll out the meat with the help of a rolling pin. If the meat is sticking to the sheet, pat some oil. The thinner the better however it should not be that thin it breaks. Thinner meat will give you the shaved meat texture which is what doner meat should be. 2mm thin worked the best.
- Leave about 1.5 inches at the end of the baking sheet (the long side that will be the length of your tray). Take the top sheet and place it to the side, clean side down.
- Fold the baking paper starting from the long side then keep folding until the end. Fold about 1.5 inches and repeat until you have a flat 1.5 inches baking sheet. Place this on your baking tray
- Repeat this process for the other 2 sections of doner meat left, using the same top sheet as you did before.
- Bake for 25-35 minutes, until the meat has cooked through The cooking time depends on how thin you have rolled the meat and what meat you are using. This is for lamb.
- Once slightly cooked, unroll the baking sheet and reveal your juicy doner meat
Doner Kebab Salad
- This is not an original Turkish recipe. This is an easy 3 ingredient salad recipe that works a treat with the kebab and adds a lot of flavour and textures.
- Cut your tomatoes into small pieces ( I cut one cherry tomatoes into 8 pieces).
- Chop your coriander and slice your red onions.
- Place the 3 ingredients in a bowl and season. I added some red pepper flakes to the salad. You can add Sumac which is more traditional.
